IIRC the TEC loremaster ingame (or was it some book.... or both ?), in telling his history of the Fighters Guild, lists a number of other guilds that got made offical at the same time as the Fighters Guild.
As for professions...........
Prostitute (worlds oldest, if added Id say we would have to do it for realism rather than the 'lol sexmod' aspect that all mods for this have had)
Mercenary (Fighters guild type w/o guild membership, lawful allignment can be iffy)
Alchemist (these need to have actualy useful potions, IE: take all the various leveld potions you can make with differnt alchemy levels+tools and give them a crosssection of them (with the really good ones costing a LOT, but at the same time selling for a lot too, maning the need to find clients for miniquets to sell the potions)
Fortune teller, basicly a random chance for a luck and/or other skill buff for an extended period of time (IE: till next visit when it is canceld and you roll for a new one). Prehaps have this profession treated poorley in certain areas
Warlock: A combination of the above two, and then some, can also act as a magical merc.
Actualy a lot of possible jobs could be took from the characther classes when setting up a characther.
